Apple Puff Pastry
For a bonus this week, we created an easy sweet treat. An apple puff pastry topped with vanilla bean ice cream, nuts and bourbon caramel. the track we chose to embody the way this desert makes us fell is "Love Train" by PillowTalk, Soul Clap, Greg Paulus and Crew Love.

Apple puff pastry
1 package puff pastry dough
1 granny smith apple
1 gala or preferred sweet apple
1 Tbs flour
1 Tbs brown sugar
1 Tsp cinnamon
1 Tbs lemon juice
2 Tbs butter
1 egg for the egg wash
Toppings
Vanilla ice cream
Crushed nuts of your choice
Bourbon caramel sauce
Take one sheet of puff pastry from the freezer and allow to soften.
On a floured surface, roll out 1 6x6 square for each pastry you want to make. This will take 2 long strips of dough, for 4 pastries, the dough is normally divided as such.
Leaving the skin on, wash and cut your apples into 1 inch thick pieces.
Mix the flour, brown sugar, and cinnamon into a mixing bowl. Toss the apples into the mixture.
Heat the butter in a sauté pan and once melted add the apples, lemon juice and cook on medium heat for 7 minutes. Continuously stir the mixture to prevent it from sticking or burning.
Remove the apples from the heat and allow to cool.
Preheat oven to 400.
Lay the dough on a cooking sheet and place a scoop of apple filling on ½ of each pieces of dough, fold over into a triangle shape and press the sides of the dough down with a fork.
Mix one egg yolk and a tsp of water into a bowl. Use a knife and score the apple pastries. Brush egg wash on the top of each pastry and bake for around 15 minutes until golden brown.
While baking prepare the caramel mixture. Top with vanilla ice cream, nuts and bourbon caramel and enjoy!
