Turkey Chili- The Remix

Leftover turkey and stuffing make for an amazing twist on chili and to pair with this meal we chose Ardalan's Mr. Good Remix Album. Mr. Good Remixes


Ingredients

serving size 4

2 cups of leftover Thanksgiving turkey, I use 1 cup white meat and 1 cup dark meat

**** If you make this past 2 days after the original day of cooking, freeze the turkey to prevent bacteria from growing.

2 Tbs olive oil

4 large cloves of garlic

2 large peeled carrots

1/2 white onion

1/2 red bell pepper

1/2 green bell pepper

2 jalapeños

1 sweet potato - peel

1 can of kidney or preferred bean

1 can of corn

1 Tbs fresh diced rosemary

1/2 tsp cinnamon

2.5 tsp cumin

2 tsp chili powder

2 cups chicken stock

2 tbs tomato paste

few dashes of hot sauce if you like an extra kick

Our favorite hot sauce!

Wash, peel, de-seed and dice your vegetables. Warm a dutch oven or pot to medium/low heat. Add your olive oil, onion, garlic and carrots. Allow veggies to sauté for 3 minutes. Add in your bell peppers, hot peppers and sweet potato. Stir the mixture to keep it from sticking and cook for 5 minutes.

Add in you fresh rosemary, cinnamon, cumin and chili powder. Give the vegetable mixture a good toss and add in your turkey meat with any fat or jellied turkey juice and your can of tomato. Salt and pepper the mixture and add the chicken stock.

Allow the mixture to simmer for 5 minutes before adding in the tomato paste. Give the mixture a good stir and bring to a boil. Reduce the heat to a simmer, cover and allow the chili to cook down at least 45 minutes. Make sure to stir every 15 minutes or so.

Taste and add any additional seasoning, salt and hot sauce you desire. When you are 10 minutes from eating add the can of beans and corn. If you have leftover stuffing warm it up in the oven and broil for a few minutes to give it an extra crunch. Stuffing is a great substitute for corn bread and really gives the chili a holiday feel.

Top with sour cream, onion, cheese and hot sauce if you please!
