Lemon Basil Pasta with Broccolini and Goat Cheese

Music has taken all of us many places both physically and spiritually.  We believe the same reigns true for food in addition to music so we love when the two can be tied together.  In the first installment of the Beets For the Soul Spotify playlist (link on home page) we see a throwback to a friend made at Miami Music Week 2012, Stefano Ritteri, as well as a connection to a trip to Rome of our own.  Stefano Ritteri, a native of Rome, Italy, has a diverse music background and vast knowledge of production spanning different genres. We see his newest EP "Come Back to Me" in full bringing a range of sounds perfect for the kitchen or dinner table.  In addition to this amazing EP, we added Crazy P's "Like a Fool" which is a timeless track with vibes for the dance floor or the dinner table.  Finally, we included a feel good track also heard while enjoying a late night dinner in Rome by Wolfgang Wee ft. Ingredients: (serving size 2-3)

1 - 8 oz package of broccolini

1 package of fresh basil

1 lemon

1 - 4 oz package fresh goat cheese

1/4 cup white wine - optional

1/4 cup chicken stock (add additional 1/4 cup as wine substitute)

Crushed red pepper

4 small shallots

3 large cloves of garlic

1/4 cup olive oil

1/2 - 8 oz jar sun-dried tomato

Homemade fettuccine noodle ingredients (optional): *Directions at bottom

2 large eggs

And

2 egg yolks (need both for consistency - room temperature eggs)

2 cups flour

1 tablespoon warm water

Store bought pasta is also a great option if you don’t have extra time to make your own.

Wash all produce and pat dry. We do our best to use local organic produce, when possible, and stick with in-season fruits and vegetables.

Dice shallots, garlic, 1/2 jar of sun-dried tomatoes, 1 handful of basil (stems included)

Turn sauté pan on low

Add 1/2 sun-dried tomato oil from the jar into the pan

Add olive oil

Sauté garlic and shallot for 5 mins - low heat

Add sun-dried tomatoes and basil - sauté 5 mins - low heat

Sprinkle with salt

Add white wine (optional)

Juice 1 large lemon slice into pan

Turn heat up to medium-low

At this time begin heating the pasta water (add salt)

Cut off the bottom of the broccolini stems - roughly 1-2 inches

Split broccolini length-wise - add to pan

Add crushed red pepper (optional for spice)

Add chicken stock - cook for 7 mins and then bring pan down to a simmer on low

Use this time to cook pasta to al dente (fresh pasta will only need around 4 -5 minutes be sure to keep an eye on it as it cooks much faster than boxed)

Save 1/4 cup of pasta water - drain noodles

Add 1/4 cup of pasta water to sauce - stir

Add in pasta

Using your hands crumble goat cheese in to pasta - 3/4 of 4 oz package

Lightly toss pasta mixing in the sauce and cheese

Top with fresh basil leaves, a squirt of lemon, and ground black pepper (add crushed red pepper for spice)

Grated parmesan and leftover goat cheese are great additional toppers for cheese lovers as well!

* Homemade fettuccine

Take out eggs ahead of time to allow them to reach room temperature.

Clean counter top or work space and dry. A smooth surface is preferred.

Pour out 2 cups of flour onto the counter.

Make a well in the center of the flour and add 2 full eggs and 2 egg yolks.

Using a fork gently mix in eggs slowly drawing in the flour.

Now use your hands to knead the mixture until dough starts to form, around 10 minutes.

If dough is still dry and crumbling add 1 table spoon of warm water and continue to knead.

Sprinkle with extra flour if sticking to your hands/counter.

After dough is well kneaded, form into a ball and cover tightly in a clean towel or plastic wrap. Let the dough sit for 45 minutes to rest. Resting the dough is an important step as it allows it to roll out easily in the next step.

After the resting period divide the dough into four equal portions and using a rolling pin roll them into small flat circles. Run through your pasta machine multiple times until desired thickness and then use the cutting attachment to cut into fettuccine

Allow the noodles to hang dry or lay out for around an hr prior to cooking.
