Good TV Grilled Cheese

Ingredients
1 loaf sourdough bread
1 8 oz package Gruyere/white cheddar mix – I used Wood River brand - grate the cheese
1 large heirloom tomato
1 tsp mayonnaise per piece of bread
1 tsp room temperature butter per piece of bread
Shallot Habanero Jam
6 large shallots
2 tbs butter
½ a habanero pepper – ( or 1 full pending your heat preference)
2 tbs honey
2 tbs balsamic vinegar
2 tbs fresh parsley
1/2 tsp salt
Start by rinsing and drying all produce. Dice shallots and habanero, make sure to remove stem and seeds from your habanero pepper. Wash your hands multiple times after to be sure not to burn your eyes or skin. Add the butter to a cast iron pan at medium/low heat.
Once melted and the desired amount of habanero pepper to your plan. Next add the shallots and allow the natural flavors to open and cook down for 5 minutes prior to adding salt.
Next add the fresh parsley. Make sure shallots are not burning and turn down the heat as needed. Allow another 3 minutes for the mixture to cook down.
Add the honey and balsamic vinegar and give the mixture a good stir. Continue to heat on low heat. The shallots will start turning a deep brown color from the caramelization.
After another 10 minutes or so, once your shallot mixture is a deep brown and has a jam like texture, remove from heat and set aside.
Slice your tomato into thick slices, 1 per sandwich or 2 if you like more!
Take 2 pieces of sourdough and spread with mayo on one side. On the other side spread the butter. Heat your cast iron to a medium heat and lay the bread on the pan mayonnaise side down.
Layer the cheese on both sides of your bread. Allow the bread to crisp up and place a lid over to steam the cheese. Once the cheese has melted, layer with shallot jam and a cold slice of tomato.
